Product description

The machine is used to automatically cut the skin from the steak to the breastbone, starting from the hole made by the steakhouse. The machine is placed second in the evisceration line after the steakhouse.

OPERATION

The carcasses are fed into the machine facing the chest outwards and the back towards the centre of the machine. The machine is a carousel type, driven by an overhead conveyor. The knife unit, equipped with an exceptionally sharp knife, ensures a uniform and clean cut. The knife holder is designed in such a way that the entrails are pushed out of the cutting line, preventing contamination. The cutting heads are washed and cleaned after each circular movement.
